Lemon-Verbena Cucumber Cooler

A refreshing summer drink combining cucumber, lemon, and lemon verbena for a delightful and healthy beverage.

Ingredients

  • 1/2 large cucumber, blended and strained
  • 4 fresh lemon-verbena leaves, lightly bruised
  • Juice of 1 lemon
  • 3/4 cup filtered water
  • A pinch of fine sea salt
  • 1 tablespoon light honey
  • Ice
  • Cucumber ribbon (for garnish)
  • Verbena sprig (for garnish)

Instructions

  1. Gather all your ingredients on the counter.
  2. Prepare the cucumber by cutting and blending until smooth.
  3. Mix the strained cucumber juice, lemon-verbena leaves, lemon juice, water, and sea salt.
  4. Shake using a cocktail shaker or jar to combine well.
  5. Double-strain the mixture over ice into your glass.
  6. Garnish with a cucumber ribbon and verbena sprig before serving.

Notes

Store combined liquids in the fridge without ice for up to 24 hours. Substitute light honey with agave syrup for a vegan version.
