London Fog Cookies

A unique and flavorful cookie combining Earl Grey tea with lavender, offering a healthier dessert option.

  • 10 tablespoons granulated sugar, divided
  • 3 Earl Grey tea bags
  • 1 tablespoon culinary grade lavender
  • 7 tablespoons unsalted butter
  • 1/4 cup light brown sugar
  • 1 large egg at room temperature
  • 1 teaspoon vanilla extract
  • 1 1/4 cups flour
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon kosher salt

Instructions

  1. Preheat your oven to 350 degrees and line two baking sheets with parchment paper.
  2. In a small bowl, place 4 tablespoons of the granulated sugar. Set it aside for later.
  3. Snip open the tea bags and place the tea leaves in a small food processor. Add the culinary lavender and process until finely ground.
  4. Melt the butter in a large microwave-safe bowl with the ground tea and lavender mixture. Let it sit for about 5 minutes to allow the flavors to meld.
  5. After 5 minutes, add the remaining granulated sugar and light brown sugar to the bowl. Mix well until it’s smooth.
  6. Incorporate the egg and vanilla extract, stirring until smooth and creamy.
  7. Gradually add the flour, baking powder, baking soda, and kosher salt to the wet ingredients. Mix until just combined to avoid overworking the dough.
  8. Using a cookie scoop, form small balls of dough and place them onto the prepared baking sheets. Roll each dough ball in the reserved sugar from step 2.
  9. Bake in the preheated oven for about 8-10 minutes, or until the cookies are light golden brown.
  10. Allow the cookies to cool on a wire rack. Once cooled, store them in an airtight container.

Notes

For a healthier twist, substitute half of the flour with almond or oat flour. Use sugar substitutes for a low-carb version.
