Lychee Rose Ramune

A refreshing beverage combining the sweet, floral notes of lychee and rose with fizzy sparkling water, perfect for sunny days and parties.

Ingredients

  • 1 cup fresh or canned lychees (drained, reserve juice)
  • 2 tablespoons dried culinary rose petals or 1 tablespoon rosewater
  • 1/4 cup fresh lychee juice
  • 3 tablespoons honey or agave
  • 2 cups sparkling water (cold)
  • 1 tablespoon fresh lemon juice
  • Ice cubes
  • Fresh rose petals for garnish
  • Whole lychees for garnish
  • Optional: edible glitter

Instructions

  1. If using fresh lychees, peel, pit, and cut them in half. Blend a few to get 1/4 cup of juice.
  2. If using canned lychees, drain and blend 3-4 lychees to extract juice.
  3. In a small saucepan, gently warm 1/4 cup lychee juice with rose petals over low heat.
  4. Remove from heat and let steep for 5-7 minutes.
  5. Strain through a fine mesh strainer, pressing gently on the rose petals.
  6. In a large pitcher, combine the rose-infused lychee juice with honey and stir until the honey dissolves.
  7. Add the remaining lychee juice and lemon juice to the pitcher.
  8. Just before serving, add cold sparkling water and stir gently.
  9. Fill glasses with ice cubes.
  10. Pour into glasses and garnish with rose petals and whole lychees. Serve immediately.

Notes

Best served fresh with sparkling water added just before serving to maintain fizz.
