Mini Pineapple Cranberry Cheese Balls

  • 1/2 cup crushed pineapple, drained
  • 1/4 cup dried cranberries, chopped
  • 1/4 cup pecans, finely chopped
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • Additional pecans for rolling

Instructions

  1. Combine the softened cream cheese, crushed pineapple, dried cranberries, powdered sugar, vanilla extract, cinnamon, and salt in a mixing bowl. Mix until everything is well blended and smooth.
  2. Chill the mixture in the refrigerator for about 30 minutes to let it firm up a bit.
  3. Use a small cookie scoop or your hands to form the mixture into bite-sized balls after chilling.
  4. Roll each cheese ball in the finely chopped pecans until they are fully coated.
  5. Place the cheese balls on a serving platter and keep them refrigerated until it’s time to serve.
