Mint Cucumber Lime Refresher

A refreshing and healthy drink made with cucumber, mint, and lime, perfect for quenching your thirst on hot days.

Ingredients

  • 1 medium cucumber, sliced
  • 2025 fresh mint leaves
  • 3 limes, juiced (about 1/4 cup)
  • 4 cups filtered water or sparkling water
  • 23 tablespoons honey or agave (optional)
  • Ice cubes
  • Cucumber rounds for garnish
  • Mint sprigs for garnish

Instructions

  1. Wash cucumber thoroughly and slice into thin rounds.
  2. In a large pitcher, gently muddle the mint leaves with the back of a wooden spoon to release oils.
  3. Add the cucumber slices to the pitcher with the mint.
  4. Squeeze fresh lime juice into the pitcher.
  5. Add honey if desired and stir well to combine.
  6. Pour in 4 cups of cold water or sparkling water.
  7. Stir gently and refrigerate for at least 120 minutes.
  8. Fill glasses with ice cubes.
  9. Pour the refresher into glasses, ensuring each gets some cucumber and mint.
  10. Garnish with fresh cucumber wheel and mint sprig on rim.

Notes

This drink is best consumed fresh but can be stored in the refrigerator for up to three days.
