Mozzarella Pepperoncini Antipasto Salad

  • 8 oz fresh mozzarella pearls (bocconcini), drained
  • 1 cup sliced pepperoncini peppers
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, sliced
  • 1/2 cup black olives
  • 1/2 cup Kalamata olives
  • 1/2 cup sliced salami, cut into bite-sized pieces
  • 1/2 cup sliced pepperoni
  • 1/4 cup thinly sliced red onion
  • 1/2 cup marinated artichoke hearts, chopped
  • 1/4 cup roasted red peppers, sliced
  • 2 tablespoons chopped fresh parsley
  • 1/3 cup extra virgin olive oil
  • 3 tablespoons red wine vinegar
  • 1 tablespoon pepperoncini brine
  • 2 cloves garlic, minced
  • 1 teaspoon Dijon mustard
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/2 cup cubed provolone cheese (optional)
  • Fresh basil leaves for garnish (optional)
  • 1/2 cup chickpeas, drained and rinsed (optional)
  • 1/2 cup sliced banana peppers (optional)
  • 1/4 cup chopped sun-dried tomatoes (optional)
  • 2 tablespoons toasted pine nuts (optional)

Instructions

  1. Combine the salad ingredients in a large serving bowl: mozzarella pearls, pepperoncini, cherry tomatoes, cucumber, black olives, Kalamata olives, salami, pepperoni, red onion, artichoke hearts, roasted red peppers, and parsley.
  2. Prepare the dressing by whisking together olive oil, red wine vinegar, pepperoncini brine, garlic, Dijon mustard, Italian seasoning, oregano, crushed red pepper flakes, kosher salt, and black pepper in a small bowl or mason jar.
  3. Pour the dressing evenly over the salad ingredients.
  4. Toss lightly to coat the salad with the dressing, ensuring every component is mixed together without over-mixing.
  5. Chill the salad in the refrigerator for 20-30 minutes to allow flavors to meld.
  6. Serve by tossing gently again and enjoy chilled as a light meal or side dish.

Notes

For added protein, consider adding chickpeas. This salad can also be made gluten-free by ensuring all ingredients are certified gluten-free.
