No Bake Chocolate Peanut Butter Cookies

Quick and healthy no-bake cookies made with chocolate, peanut butter, and oats.

Ingredients

  • 1/2 cup Butter
  • 1 2/3 cups Sugar
  • 1/2 cup Evaporated Milk
  • 1/4 cup Unsweetened Cocoa Powder
  • 1 cup Creamy Peanut Butter
  • 2 teaspoons Vanilla Extract
  • 3 cups Quick Cook Oats
  • 1/4 teaspoon Salt

Instructions

  1. Prepare the Oats: In a large bowl, add the oats and salt. Stir to combine and set aside.
  2. Make the Chocolate Mixture: In a small saucepan over medium-high heat, whisk together the butter, sugar, evaporated milk, and cocoa powder. Bring to a rolling boil and boil for one minute.
  3. Add Peanut Butter and Vanilla: Remove from heat, add peanut butter and vanilla extract, and whisk until smooth.
  4. Combine with Oats: Pour the warm chocolate mixture over the oat mixture and stir until well coated.
  5. Form the Cookies: Line a baking sheet with wax paper or parchment paper. Drop the mixture onto the lined baking sheet.
  6. Cool and Store: Allow cookies to cool completely and then refrigerate to firm up.

Notes

Use natural peanut butter for a healthier option. Store in an airtight container in the refrigerator.
