No-Bake Samoa Cookies

A healthier and delicious version of the classic Samoa cookie, made with oats, coconut, caramel, and chocolate without the need to bake.

Ingredients

Scale
  • 1 cup rolled oats
  • 1 cup shredded coconut
  • 1/2 cup caramel sauce
  • 1/2 cup chocolate chips
  • 1/4 cup unsalted butter
  • 1/2 teaspoon vanilla extract
  • A pinch of salt

Instructions

  1. Combine the dry ingredients: In a large bowl, combine the rolled oats, shredded coconut, and salt. Stir together until well mixed.
  2. Prepare the caramel mixture: In a small saucepan, melt the butter and caramel sauce over low heat. Stir continuously until smooth.
  3. Add the vanilla: Remove from heat and stir in the vanilla extract until well incorporated.
  4. Pour the caramel mixture over the oat and coconut mixture, stirring thoroughly until evenly coated.
  5. Form cookie shapes: Line a baking sheet with parchment paper. Use your hands to form small balls or clusters and place them on the sheet.
  6. Melt the chocolate: In a microwave-safe bowl, melt the chocolate chips, heating in 30-second intervals until smooth.
  7. Coat the cookies: Drizzle or dip the cookies in the melted chocolate.
  8. Refrigerate: Place the cookies in the fridge for at least 30 minutes to harden.

Notes

For a lower-calorie version, use low-sugar caramel and dark chocolate chips. Store cookies in an airtight container in the refrigerator.
