Old-Fashioned Cabbage Rolls

A comforting and hearty dish made with lean ground beef and brown rice, wrapped in cabbage leaves for a healthy, nostalgic meal.

Ingredients

Scale
  • 1 cup cooked long-grain rice
  • 1.5 pounds lean ground beef
  • 1.5 tablespoons Worcestershire sauce
  • 1 large egg
  • 1 yellow onion, peeled and minced
  • 1/3 cup chopped fresh parsley
  • 3 cloves garlic, minced
  • 1.5 teaspoons salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/2 teaspoon dried dill
  • 1/2 teaspoon onion powder
  • 1/2 to 1 teaspoon crushed red pepper flakes (optional)
  • 3 (13.5-ounce) cans tomato sauce
  • 1 medium head green cabbage
  • 1/2 cup water
  • Chopped fresh dill (to taste, for garnish)
  • Cooking spray (for greasing)

Instructions

  1. Preheat the oven to 350°F.
  2. Combine the lean ground beef with Worcestershire sauce, egg, cooked rice, onion, parsley, garlic, salt, pepper, dill, onion powder, and chili flakes in a large bowl.
  3. Boil a large pot of water, then add the cabbage and cover. Boil for 8 to 10 minutes until outer leaves soften. Peel off about 18 softened leaves.
  4. Grease your baking dish. Place some cabbage leaves at the bottom to prevent sticking. Assemble the rolls with 1/4 cup filling in each leaf and roll up.
  5. Whisk together remaining tomato sauce and water. Pour over the rolls in the dish, adding extra cabbage leaves on top.
  6. Cover with aluminum foil and bake for 2 hours and 15 to 30 minutes until beef is cooked through.
  7. Let cool for about 20 minutes and garnish with fresh dill before serving.

Notes

Cabbage rolls are great for meal prep and can be frozen before baking. They maintain their flavor well when reheated.
