One Pan Cheesy Taco Mac

A delicious one-pan meal combining the bold flavors of tacos with the comfort of macaroni and cheese.

  • 1 lb ground beef
  • 1 onion, chopped
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 2 tsp chili powder
  • 1 tsp cumin
  • 1 tsp garlic powder
  • 1 tsp dried cilantro
  • 1 1/2 cups chicken broth
  • 2 1/2 cups elbow macaroni
  • 10 oz can of Rotel (not drained)
  • 8 oz can of tomato sauce
  • 1 tbsp minced garlic
  • 2 cups shredded Colby Jack cheese
  • 1/3 cup milk
  • Fresh cilantro for garnish

Instructions

  1. Cook the Beef and Onions: In a large skillet over medium heat, add the ground beef and chopped onion. Stir and cook until the beef is browned and no longer pink.
  2. Season the Mixture: Season with salt, pepper, chili powder, cumin, garlic powder, and dried cilantro. Mix well and cook for an additional 2-3 minutes.
  3. Add Remaining Ingredients: Reduce heat slightly and add minced garlic, elbow macaroni, chicken broth, Rotel, and tomato sauce. Stir together and bring to a boil.
  4. Cook the Pasta: Cover and simmer for about 12 minutes, stirring halfway through, until pasta is cooked.
  5. Add Cheese and Milk: Stir in shredded cheese and milk until the mixture is creamy.
  6. Serve and Garnish: Serve hot, garnished with fresh cilantro.

Notes

For healthier options, use lean ground turkey and whole grain pasta. This dish is suitable for meal prep and leftovers can be stored in the fridge for up to three days.
