One-Pot Beef Pasta

A delightful and nutritious one-pot beef pasta dish that’s perfect for busy weeknight dinners.

  • 1 lb Ground Beef
  • 1 cup Bell Peppers, diced
  • 1 can (14.5 oz) Canned Diced Tomatoes
  • 4 cups Beef Broth
  • 2 cups Pasta (elbows or shells)
  • 1 Onion, diced (optional)
  • 3 cloves Garlic, minced (optional)
  • 1 tsp Italian Seasoning
  • 1 tbsp Worcestershire Sauce
  • Red Pepper Flakes (optional, to taste)
  • Cheese (Parmesan or mozzarella, optional)

Instructions

  1. Brown the ground beef in a large pot over medium-high heat for 8 to 10 minutes, breaking it apart until browned. Drain excess fat if necessary. If using, add onion and garlic and sauté until soft.
  2. Add the diced bell peppers and canned tomatoes with their juices. Cook for an additional 2 to 3 minutes.
  3. Pour in the beef broth and add the uncooked pasta. Stir well to submerge the pasta.
  4. Bring to a gentle boil, then reduce heat to low, cover, and let simmer for 15 to 20 minutes until pasta is tender.
  5. Serve warm, optionally garnished with fresh herbs or cheese.

Notes

Great for meal prep; stores well and reheats easily. Can be frozen for up to three months.
