One-Pot Buffalo Chicken Mac and Cheese

A healthier twist on a classic comfort food, this One-Pot Buffalo Chicken Mac and Cheese combines tender chicken, zesty Buffalo sauce, and creamy cheese, all in one pot.

Ingredients

Scale
  • 1 1/2 lbs uncooked boneless skinless chicken breasts
  • 6 tablespoons Buffalo wing sauce
  • 4 tablespoons light butter
  • 1/4 cup flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 1/2 cups skim milk
  • 2 1/2 cups water
  • 10 oz uncooked whole wheat elbow macaroni
  • 6 oz 50 percent reduced fat sharp cheddar cheese, shredded

Instructions

  1. Boil the chicken by placing the chicken breasts in a Dutch oven with water above the meat. Bring to a boil, then reduce heat and cook for 15-20 minutes.
  2. Prepare the chicken by chopping it into small pieces and tossing it with Buffalo sauce.
  3. Make the sauce base by melting light butter in the pot, whisking in flour, salt, and black pepper, and cooking for about a minute.
  4. Create a creamy base by whisking in skim milk and water until smooth.
  5. Cook the pasta by stirring the mixture until boiling, then adding the macaroni and cooking for about 8 minutes.
  6. Combine ingredients by stirring in the cheddar cheese until melted and then adding the Buffalo chicken.
