A delicious and convenient dish combining flavorful sausages with pasta, perfect for meal prep and busy weeknights.

Ingredients

Scale
  • 1 tbsp Olive Oil
  • 1 lb Smoked Kielbasa or Turkey/Chicken Sausage (sliced 1/4 inch thick)
  • 1.5 cups Diced Onion
  • 2 Cloves Garlic (minced)
  • 2 cups Low-Sodium Chicken Broth
  • 1 10 oz Can Diced Tomatoes
  • 8 oz Dry Pasta (small pasta)
  • 1/2 cup Milk or Heavy Cream
  • 1/2 tsp Salt
  • 1/2 tsp Pepper
  • 1 cup Shredded Cheddar Cheese
  • 1/3 cup Thinly Sliced Scallions (for garnish)

Instructions

  1. Add Olive Oil: Start by adding 1 tablespoon of olive oil to your 4-5 quart saute pan over medium-high heat.
  2. Fry the Smoked Kielbasa and Onions: Once the oil is hot, add 1 lb of sliced smoked kielbasa and 1.5 cups of diced onion. Cook for about 5-7 minutes until browned and translucent.
  3. Add Garlic: Next, add 2 cloves of minced garlic and cook for an additional 30 seconds.
  4. Add Chicken Broth, Tomatoes, Heavy Cream, Pasta, and Seasonings: Pour in 2 cups of low-sodium chicken broth, 1 can of diced tomatoes, 1/2 cup of milk or heavy cream, and 8 oz of dry pasta. Season with 1/2 teaspoon of salt and pepper each.
  5. Simmer: Bring the mixture to a boil, then reduce the heat and let it simmer for about 15 minutes, or until the pasta is tender.
  6. Remove Skillet from Heat and Stir in Cheese: Once the pasta is cooked, take the skillet off the heat. Stir in 1/2 cup of shredded Cheddar cheese until it melts.
  7. Top with Remaining Cheese: Sprinkle the remaining cheese over the top, cover the skillet, and let it sit for a few minutes.
  8. Finish with Scallions and Serve: Finally, sprinkle the dish with 1/3 cup of sliced scallions for a fresh touch. Serve hot.

Notes

For a healthier option, substitute smoked kielbasa with turkey or chicken sausage and replace heavy cream with plant-based milk.
