Paul’s Pumpkin Patch Pudding

  • 1/4 cup Granulated Sugar
  • 1/2 cup Unsalted Butter, melted
  • 1 cup Pumpkin Puree
  • 1 cup Heavy Cream
  • 8 oz Cream Cheese, softened
  • 1/2 cup Powdered Sugar
  • 1 tsp Vanilla Extract
  • 1 tsp Ground Cinnamon
  • 1/2 tsp Ground Ginger
  • 1/2 tsp Ground Nutmeg
  • 1/2 tsp Ground Cloves

Instructions

  1. Prepare the Graham Cracker Crust: In a medium mixing bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Mix until the crumbs are evenly coated and the mixture resembles wet sand. Press the mixture firmly into a 9×13-inch baking dish to form an even crust. Place the crust in the refrigerator to set.
  2. Make the Pumpkin Layer: In another medium bowl, combine pumpkin puree, granulated sugar, cinnamon, ginger, nutmeg, cloves, and vanilla extract. Mix until smooth.
  3. Make the Cream Cheese Layer: In a large mixing bowl, beat cream cheese with powdered sugar and vanilla until smooth. Fold in whipped topping and spread over the graham cracker crust.
  4. Add the Pumpkin Layer: Spread the pumpkin mixture evenly over the cream cheese layer.
  5. Prepare the Whipped Cream Layer: In a separate bowl, whip heavy cream with powdered sugar and vanilla until stiff peaks form. Spread over the pumpkin layer.
  6. Chill and Serve: Cover with plastic wrap and refrigerate for at least 2 hours. Before serving, garnish as desired.

Notes

Substitute for a healthier version using low-fat cream cheese or a sugar substitute. Great for meal prep and can be stored in the refrigerator for up to 3 days.
