These Boozy Peach Bellini Popsicles are refreshing, fruity, and elegant with peach purée, basil, lime, and a splash of prosecco or sparkling water. Perfect for summer entertaining or a sophisticated frozen treat.

Ingredients

  • 1 cup peach purée (fresh or frozen, blended until smooth)
  • 1 tsp lime juice
  • 1 tbsp honey (optional, to taste)
  • 12 basil leaves, finely chopped
  • Optional: 1–2 tbsp prosecco or sparkling water

Instructions

  1. Peel and pit fresh peaches (or thaw frozen ones) and blend until smooth. You should have about 1 cup of purée.
  2. Mix in lime juice, honey, and chopped basil until well combined.
  3. If using, stir in a splash of prosecco or sparkling water—no more than 1–2 tbsp.
  4. Pour into popsicle molds, insert sticks, and freeze for at least 6 hours or overnight.
  5. Run molds under warm water to release pops. Serve immediately.

Notes

These popsicles are light, juicy, and fun with or without prosecco. Try substituting peaches with nectarines or mango for a fun twist. Store up to 2 weeks in the freezer.
