Peanut Butter Chocolate Zucchini Bread

  • ½ cup Unsweetened Cocoa Powder
  • 1 teaspoon Baking Soda
  • ½ teaspoon Baking Powder
  • ½ teaspoon Salt
  • 2 large Eggs
  • ½ cup Granulated Sugar
  • ½ cup Brown Sugar
  • ½ cup Vegetable Oil
  • 1 teaspoon Vanilla Extract
  • 1 ½ cups Fresh Zucchini, finely shredded
  • ½ cup Creamy Peanut Butter
  • ¾ cup Semi-Sweet Chocolate Chips

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×5 inch loaf pan or line it with parchment paper.
  2. Shred the zucchini using a box grater or food processor, retaining some moisture.
  3. Mix dry ingredients: In a medium bowl, whisk together the flour, cocoa powder, baking soda, baking powder, and salt.
  4. Combine wet ingredients: In a large mixing bowl, whisk the eggs, granulated sugar, brown sugar, vegetable oil, and vanilla extract.
  5. Add the shredded zucchini to the wet mixture and stir until evenly distributed.
  6. Fold in the dry ingredients gently until no large streaks of flour remain.
  7. Incorporate the chocolate chips, reserving some for the top if desired.
  8. Layer half of the batter in the prepared loaf pan, add spoonfuls of peanut butter, then top with the remaining batter.
  9. Add reserved chocolate chips on top and gently swirl with a knife.
  10. Bake for 50 to 60 minutes or until a toothpick inserted comes out clean.
  11. Cool in the pan for 15 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

Store in an airtight container for up to a week or freeze individual slices for a quick treat.
