Ingredients

Scale
  • 1/4 cup Water
  • 2 packets Gelatin
  • 1 cup Pineapple Juice

  • 8 ounces Coconut Rum
  • 1 cup Whipped Cream (Optional)

  2. Boil the Pineapple Juice: In a small saucepan, bring the pineapple juice to a boil over medium heat.
  3. Combine the Ingredients: Whisk the boiling pineapple juice into the bloomed gelatin until completely dissolved.
  4. Add Cream of Coconut and Rum: Stir in the cream of coconut and coconut rum into the gelatin mixture.
  5. Pour into Cups: Carefully pour the mixture into small plastic cups, filling them almost to the top.
  6. Refrigerate: Place the filled cups in the refrigerator for about 2-3 hours or until fully set.
  7. Serve: Once set, remove from the refrigerator and, if desired, top with whipped cream and a maraschino cherry.

Notes

For a healthier version, reduce the amount of cream of coconut or use a lighter alternative. These can be made ahead and stored in the fridge for convenience.
