Pineapple Cranberry Holiday Cheese Log

A festive and healthy cheese log made with cream cheese, sharp cheddar, pineapple, and cranberries, perfect for gatherings.

  • 8 oz cream cheese, softened
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup crushed pineapple, drained
  • 1/2 cup dried cranberries, chopped
  • 1/4 cup green onions, chopped
  • 1/2 cup chopped pecans
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Blend the softened cream cheese with the shredded cheddar until smooth.
  2. Fold in the crushed pineapple, chopped cranberries, green onions, garlic powder, onion powder, and add a pinch of salt and pepper. Mix it all together until it’s nice and cohesive.
  3. Lay a large piece of plastic wrap on your counter and scoop the cheese mixture into the center. Form it into a log shape.
  4. Wrap the log tightly in the plastic wrap and pop it into the fridge for at least 120 minutes, or until it’s firm and ready to slice.
  5. Roll the chilled cheese log in the chopped pecans, pressing gently so they stick.
  6. Place it on a serving platter, sprinkle with fresh parsley for a pop of color, and serve it up with crispy crackers or slices of baguette.

Notes

This cheese log can be made ahead of time and stored in the refrigerator for up to 5 days. It is also suitable for freezing.
