Pineapple Jalapeno Lime Mocktail

A refreshing mocktail that balances sweet pineapple with spicy jalapeno and zesty lime, perfect for any occasion.

Ingredients

  • 2 cups filtered water
  • 1 jalapeno, chopped into pieces
  • 1 orange, freshly squeezed
  • 1 lime, freshly squeezed
  • Handful fresh thyme sprigs, chopped into pieces
  • 1/4 cup water
  • 1/4 cup organic cane sugar
  • 1 lime, peels only
  • 1 cup lime simple syrup
  • 1 cup fresh pineapple chunks
  • 1 jalapeno, chopped
  • Premium ginger beer, for topping
  • Lime wedges (optional)
  • Pineapple wedges (optional)
  • Fresh thyme or rosemary sprigs (optional)

Instructions

  1. Make Citrus Jalapeno Ice Cubes by mixing filtered water, orange juice, and lime juice in a bowl. Add jalapenos and thyme to an ice tray, fill with the juice mixture, and freeze for 3-4 hours.
  2. Prepare the Lime Simple Syrup by combining water, organic cane sugar, and lime peels in a saucepan. Boil gently, dissolve the sugar, then simmer for 5 minutes and cool.
  3. Blend the Mocktail Ingredients by mixing orange juice, lime juice, fresh pineapple chunks, chopped jalapenos, and the cooled simple syrup in a mixing bowl.
  4. Assemble the Mocktail by placing ice-filled glasses with citrus jalapeno ice cubes and pouring the mocktail mixture over. Top with ginger beer.
  5. Garnish and Serve with lime wedges, pineapple wedges, or fresh herb sprigs for a beautiful presentation.

Notes

To cut down on sugar, consider using a sugar substitute for the simple syrup. The lime simple syrup can be stored in the fridge for up to two weeks.
