Pink Grapefruit Rosemary Cooler

A refreshing and low-calorie drink made with pink grapefruit and rosemary, perfect for hot days.

  • 2 large pink grapefruits
  • 45 fresh rosemary sprigs
  • 3 tablespoons honey or agave
  • 2 tablespoons fresh lime juice
  • 2 cups cold sparkling water
  • Ice cubes
  • Grapefruit slices for garnish
  • Fresh rosemary for garnish
  • Optional: pink sea salt for rim

Instructions

  1. Cut the grapefruits in half and juice them (you should get about 1 cup of fresh juice).
  2. Strain the grapefruit juice through a fine mesh strainer to remove pulp and seeds.
  3. In a small saucepan, gently warm 1/4 cup of the grapefruit juice with fresh rosemary sprigs over medium heat (don’t boil).
  4. Remove from heat and let the rosemary steep in the warm juice for 5-7 minutes to infuse flavor.
  5. Strain out the rosemary sprigs.
  6. In a large pitcher, combine the rosemary-infused grapefruit juice with the remaining grapefruit juice.
  7. Add honey and lime juice, then stir well until the honey dissolves completely.
  8. Refrigerate until ready to serve (this can be made ahead).
  9. Fill glasses with ice cubes.
  10. Pour the grapefruit-rosemary mixture into the glasses and top with cold sparkling water.
  11. Garnish with grapefruit slices and fresh rosemary sprigs. Serve immediately.

Notes

This drink can be made ahead and stored in the refrigerator for up to three days. For a healthier option, replace honey with a sugar substitute.
