Pizza Soup

A hearty and flavorful pizza-inspired soup packed with healthy ingredients, perfect for meal prep.

  • 3 cups Low or No-Sodium Beef Broth
  • 1 (28 oz.) can Petite Diced Tomatoes
  • 2 cups Tomato Sauce
  • 1 tsp. Dried Oregano Leaves
  • 1/4 tsp. Coarse Black Pepper
  • 2 tbsp. Olive Oil
  • 8 oz. Sliced Mushrooms
  • 1 Green Bell Pepper
  • 1 Small Onion
  • 4 Slices Pre-Cooked Bacon
  • 4 oz. Sliced Pepperoni
  • 1/2 of a Loaf of Italian Bread
  • 2 cups Grated Mozzarella Cheese

Instructions

  1. Prep your broiler and position the rack 6-8 inches from the heat source.
  2. Combine the beef broth, petite diced tomatoes, tomato sauce, oregano, and black pepper in a large pot.
  3. Sauté the sliced mushrooms in olive oil, then add chopped green bell pepper, onion, pre-cooked bacon, and sliced pepperoni.
  4. Toast thick slices of Italian bread under the broiler until lightly browned.
  5. Add grated mozzarella cheese on the toasted bread and return to the broiler until melted.
  6. Combine the sautéed mixture into the soup pot, ladle into bowls, and serve hot with cheesy toast.

Notes

For less sodium, always opt for low-sodium options in broth and canned items. This soup can be stored in the refrigerator for up to three days or frozen for up to three months.
