Pomegranate Mojitos

A fresh and healthy twist on the classic Cuban mojito using pomegranate juice, mint, and lime for a delicious low-calorie drink.

Ingredients

  • 8 large fresh mint leaves
  • 2 tablespoons simple syrup
  • 1 tablespoon lime juice (from ½ fresh lime)
  • ½ cup white rum
  • 1 cup pomegranate juice
  • ½ cup club soda
  • Fresh mint sprigs, lime wheels, and pomegranate arils (optional garnish)

Instructions

  1. Muddle mint leaves with simple syrup and lime juice in a shaker.
  2. Add rum and pomegranate juice. Cover and shake vigorously.
  3. Strain into 2 glasses filled with ice and top each with ¼ cup club soda.
  4. Garnish with mint sprigs, lime wheels, and fresh pomegranate arils, if desired.

Notes

For a non-alcoholic version, swap rum with extra club soda or chilled green tea. For lower sweetness, reduce simple syrup to 1 tablespoon or use a sugar-free syrup.
