Healthy Pumpkin Bread

A nutritious pumpkin bread recipe packed with fiber and flavor, perfect for breakfast or snacks.

  • 1 ¾ cups All-Purpose Flour
  • 1 tablespoon Pumpkin Spice or Cinnamon
  • 1 teaspoon Baking Soda
  • ½ teaspoon Salt
  • 1 can (15 oz) Pumpkin Puree
  • 1 cup Granulated Sugar
  • ½ cup Brown Sugar
  • 2 Large Eggs
  • ½ cup Vegetable Oil
  • 1 tablespoon Vanilla Extract

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Grease a 9×5 loaf pan and line it with parchment paper.
  3. Whisk together the all-purpose flour, pumpkin spice, baking soda, and salt in a medium bowl.
  4. Combine the pumpkin puree, granulated sugar, and brown sugar in a large bowl. Whisk in the eggs, vegetable oil, and vanilla extract until smooth.
  5. Gradually add the dry ingredients to the wet ingredients, stirring gently until just combined.
  6. Pour the batter into the prepared loaf pan and smooth the top with a spatula.
  7. Bake for 50 to 55 minutes, covering with foil if the top browns too quickly.
  8. Cool in the pan for 10 minutes, then lift out using parchment to cool completely before slicing.

Notes

Store leftover pumpkin bread in an airtight container at room temperature for up to three days or refrigerate for up to a week. For freezing, wrap slices in plastic and place in a freezer bag for up to three months.
