Pumpkin Brownies

Deliciously indulgent yet healthier pumpkin brownies perfect for satisfying sweet cravings without derailing your diet.

  • 1 box store-bought brownie mix
  • 1/3 cup chocolate chips or chopped chocolate
  • 4 ounces Neufchatel or full-fat cream cheese
  • 3/4 cup pumpkin puree
  • 1/4 cup pure maple syrup
  • 1.5 teaspoons pumpkin pie spice
  • 1 teaspoon pure vanilla extract
  • Flaky sea salt, for sprinkling

Instructions

  1. Preheat your oven to 350℉.
  2. Line a 9×9-inch baking pan with parchment paper.
  3. Prepare the brownie batter according to the package instructions and stir in the chocolate chips.
  4. Beat cream cheese until smooth, then add pumpkin puree, maple syrup, pumpkin pie spice, and vanilla extract. Mix until creamy.
  5. Spread about three-quarters of the brownie batter into the prepared baking pan.
  6. Layer the pumpkin-cream cheese mixture on top of the brownie batter.
  7. Drop spoonfuls of the remaining brownie batter over the pumpkin layer.
  8. Swirl the batters together gently using a knife.
  9. Bake for 45-50 minutes, or until a toothpick inserted comes out clean.
  10. Cool on a wire rack and then cut into 16 squares, sprinkling with flaky sea salt.
