  • 1 1/2 cups granulated sugar
  • 1/2 cup unsalted butter
  • 2 teaspoons pumpkin pie spice
  • 1 teaspoon vanilla extract
  • 1 teaspoon salt
  • 2 1/2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 cup granulated sugar for coating
  • 1 cup confectioners’ sugar

Instructions

  1. Cook the pumpkin puree in a small saucepan over medium heat for about 7 to 10 minutes until thicker.
  2. Combine the sugar, unsalted butter, pumpkin pie spice, vanilla extract, and salt in a large bowl.
  3. Add the warm pumpkin to the mixture and stir until combined.
  4. Add the all-purpose flour, baking powder, and baking soda, stirring gently until a soft dough forms.
  5. Refrigerate the dough covered for at least 1 hour.
  6. Preheat your oven to 350°F (175°C) and prepare baking sheets with parchment paper.
  7. Prepare the sugar coating by placing granulated sugar and confectioners’ sugar in separate bowls.
  8. Arrange the coated dough balls on the prepared baking sheets.
  9. Bake for 15 to 18 minutes, rotating halfway through.
  10. Cool the cookies on a wire rack before serving.

Notes

For a healthier version, substitute some sugar with a low-calorie sweetener and reduce butter or use applesauce.
