  • 1 teaspoon pumpkin pie spice
  • 1/2 cup almond butter
  • 1/3 cup pumpkin puree
  • 1/4 cup raw honey (or maple syrup for vegan option)

Instructions

  1. Combine dry ingredients: In a large mixing bowl, combine rolled oats, protein powder, and pumpkin pie spice. Mix thoroughly.
  2. Add wet ingredients: Add almond butter, pumpkin puree, and honey (or maple syrup) and mix until a cohesive dough forms.
  3. Adjust consistency: If too dry, add more pumpkin puree or almond milk; if too wet, add oats or protein powder.
  4. Portion the mixture: Using a cookie scoop, portion into 22 to 24 equal-sized portions.
  5. Roll into balls: Roll each portion between your hands to form smooth balls.
  6. Chill them: Place balls on a parchment-lined plate and freeze for about 10 minutes.
  7. Serve and store: Serve immediately or store in an airtight container in the refrigerator.
