Instructions

  1. Prepare the Dough: In a mixing bowl, combine the softened butter and granulated sugar. Beat them together until light and fluffy. Add the egg, pumpkin puree, and vanilla extract, mixing until fully combined.
  2. Add the Dry Ingredients: In another bowl, whisk together the flour, baking soda, baking powder, salt, ground cinnamon, ground ginger, ground nutmeg, and ground cloves. Gradually add this mixture to the wet ingredients, stirring until just combined.
  3. Chill the Dough: Cover with plastic wrap and refrigerate for at least 30 minutes.
  4. Preheat the Oven: Preheat your oven to 350°F (175°C).
  5. Roll the Dough: Scoop the dough and roll it into balls about 1 inch in size. Roll each ball in the cinnamon-sugar mixture to coat.
  6. Bake the Cookies: Place on a baking sheet lined with parchment paper and bake for 10 to 12 minutes or until the edges are lightly golden.
  7. Serve: Let the cookies cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.
