Sausage, Onion, Bell Peppers & Tomatoes Over Rice

A hearty dish combining juicy sausage, sweet onions, and vibrant bell peppers over a bed of warm rice.

  • 1 lb turkey sausage, sliced into ¼-inch rounds
  • 1 large green bell pepper, sliced
  • 1 medium yellow bell pepper, sliced (optional)
  • 1 large yellow onion, sliced
  • 1 cup cherry tomatoes, halved (or 1 medium tomato, diced)
  • 2 tablespoons olive oil or butter
  • 1 teaspoon garlic powder
  • 1 teaspoon black pepper
  • ½ teaspoon salt, or to taste
  • 1 teaspoon Cajun seasoning (optional)
  • 2 cups cooked white rice, for serving

Instructions

  1. Heat the olive oil or butter in a large skillet over medium heat.
  2. Add the sausage slices to the skillet and cook for 4–5 minutes on each side until browned. Remove and set aside.
  3. In the same skillet, add the sliced onions and bell peppers; sauté for 5–6 minutes until softened.
  4. Add the halved cherry tomatoes and cook for 2–3 minutes.
  5. Return the sausage to the skillet, add garlic powder, black pepper, salt, and Cajun seasoning; stir to combine.
  6. Cook for 2–3 minutes to blend flavors.
  7. Serve hot over cooked white rice.

Notes

Garnish with fresh herbs for added flavor. Adjust spiciness with hot sauce as desired.
