A creamy, rich, and hearty loaded potato soup made effortlessly in your slow cooker, perfect for chilly evenings.

Ingredients

Scale
  • 4 pounds Russet potatoes, peeled and diced into 1-inch cubes
  • 1 carton (32 ounces) low-sodium chicken stock
  • 1 medium yellow onion, finely diced
  • 3 to 4 cloves fresh garlic, minced
  • 1 ½ teaspoons kosher salt
  • 1 ½ teaspoons freshly cracked black pepper
  • 4 tablespoons unsalted butter
  • ¼ cup all-purpose flour
  • 2 cups heavy whipping cream
  • ¼ cup sour cream
  • 1 pound thick-cut bacon, cooked and crumbled
  • 1 ½ to 2 cups sharp cheddar cheese, freshly shredded
  • 3 to 4 scallions, thinly sliced

Instructions

  1. Prep and Start the Slow Cooker: Peel and chop the potatoes, onion, and garlic, and transfer to the slow cooker. Add salt and pepper, then pour in the chicken broth. Cook on High for 4 hours or Low for 6 to 7 hours.
  2. Crisp the Bacon: Slice bacon, cook in a skillet until crispy, then divide between the soup and garnishing.
  3. Mash for Ideal Texture: Once potatoes are tender, mash roughly half of them in the slow cooker.
  4. Whisk the Cream Roux: In a skillet, melt butter, whisk in flour, add cream and sour cream, and simmer until thickened.
  5. Combine, Melt, and Simmer: Add the cream roux to the slow cooker with cheese and half the bacon. Stir and let simmer for 30-45 minutes.
  6. Garnish and Serve: Serve the soup topped with reserved bacon, cheddar, scallions, and sour cream. Enjoy with crusty bread.

Notes

For the best texture, grate cheese from a block and be cautious with salt levels. Store leftovers in the fridge and reheat with added liquid if needed.
