A healthier take on the classic Salisbury Steak, made in a slow cooker and perfect for meal prep.

Ingredients

Scale
  • 2 pounds lean ground beef
  • 1 large egg, well beaten
  • 1/2 cup plain breadcrumbs
  • 1 ounce packet beefy onion soup mix
  • 3 tablespoons milk
  • 1 tablespoon Worcestershire sauce
  • 1/4 cup all-purpose flour
  • 2 tablespoons vegetable oil
  • 2 (14.5 ounce) cans beef broth
  • 1 ounce packet au jus gravy mix
  • 4 cloves garlic, minced
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dijon mustard
  • 1/4 cup water
  • 2 tablespoons cornstarch
  • Fresh chopped flat-leaf parsley for garnish

Instructions

  1. Prepare the Meat Mixture: In a large mixing bowl, combine the ground beef, beaten egg, breadcrumbs, beefy onion soup mix, milk, and Worcestershire sauce. Mix thoroughly until well combined.
  2. Form the Patties: Divide the meat mixture into 8 equal portions, shaping them into patties.
  3. Dredge in Flour: Dip both sides of each patty into the all-purpose flour, coating evenly.
  4. Sear the Patties: Heat the vegetable oil in a skillet over medium-high heat. Add the patties and sear both sides until golden brown, about 3-4 minutes per side.
  5. Transfer to Slow Cooker: Spray the slow cooker with cooking spray and layer the seared patties inside.
  6. Prepare the Gravy Mixture: In another bowl, whisk together the beef broth, au jus gravy mix, minced garlic, Worcestershire sauce, and dijon mustard until smooth.
  7. Add Gravy to Patties: Pour the gravy over the patties in the slow cooker, ensuring they are well covered.
  8. Cook: Cover and cook on low for 4-5 hours or high for 3-4 hours until fully cooked through.
  9. Thicken the Gravy: Remove the patties and whisk together the water and cornstarch until smooth. Gradually pour into the gravy and whisk until thickened.
  10. Serve and Garnish: Return the patties to the skillet, coat in gravy, and serve hot garnished with parsley.
