Soft and Chewy Pineapple Cookies

Delicious and healthier cookies made with crushed pineapple, perfect for satisfying your sweet tooth without the guilt.

  • 2 cups All-Purpose Flour
  • 1/2 teaspoon Baking Soda
  • 1/4 teaspoon Salt
  • 1/2 cup Unsalted Butter, softened
  • 1 cup Brown Sugar
  • 1/2 cup Granulated Sugar
  • 1 Large Egg
  • 1 teaspoon Vanilla Extract
  • 1 cup Crushed Pineapple, drained
  • 1 cup Shredded Coconut, optional
  • 1/2 cup Chopped Nuts, optional

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Whisk together the flour, baking soda, and salt in a mixing bowl.
  3. Cream the butter, brown sugar, and granulated sugar until smooth.
  4. Beat in the egg and vanilla extract until well combined.
  5. Fold in the crushed pineapple, coconut, and nuts if using.
  6. Gradually mix in the dry ingredients until just combined.
  7. Drop spoonfuls of cookie dough onto a parchment-lined baking sheet.
  8. Bake for 12-15 minutes or until golden around the edges.
  9. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

Store leftover cookies in an airtight container at room temperature for up to a week. Consider swapping half of the all-purpose flour with whole wheat flour for added nutrition.
