Spiced Pumpkin Latte

A healthy and delightful autumn drink combining pumpkin and warm spices, perfect for weight loss and high in protein and fiber.

  • 1/2 cup Unsalted Butter, melted and slightly cooled
  • 1/2 cup Granulated Sugar
  • 1/2 cup Brown Sugar, packed
  • 1 Large Egg Yolk
  • 1 teaspoon Vanilla Extract
  • 1/3 cup Pumpkin Puree, not Pumpkin Pie Filling
  • 3 teaspoons Instant Coffee
  • 1/4 teaspoon Salt
  • 3/4 teaspoon Baking Soda
  • 1 teaspoon Ground Cinnamon
  • 1/4 teaspoon Ground Ginger
  • 1/4 teaspoon Ground Nutmeg
  • 1/4 teaspoon Ground Cloves
  • 1 1/2 cups All-purpose Flour
  • 2/3 cup Cinnamon Chips
  • 3 tablespoons Hot Water
  • 1 teaspoon Instant Coffee
  • 1 1/2 cups Confectioner Sugar

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Mix the melted butter, granulated sugar, and brown sugar in a large bowl until well combined.
  3. Add the egg yolk and vanilla extract, mixing until smooth.
  4. Stir in the pumpkin puree and instant coffee until fully incorporated.
  5. Whisk together the salt, baking soda, cinnamon, ginger, nutmeg, cloves, and flour in a separate bowl.
  6. Gradually add the dry ingredients to the wet ingredients until just combined.
  7. Fold in the cinnamon chips.
  8. Drop tablespoon-sized balls of dough onto a baking sheet lined with parchment paper. Bake for 10-12 minutes.
  9. Mix the confectioner sugar with hot water and instant coffee until smooth for the glaze.
  10. Allow the glaze to set before serving and enjoy your homemade Spiced Pumpkin Latte!

Notes

For a lighter option, substitute granulated sugar with coconut sugar. Can be made gluten-free by using a gluten-free flour blend.
