Strawberry Basil Cream Soda

A delightful twist on a classic summer beverage that combines the sweetness of fresh strawberries with the aromatic note of basil.

  • 1.5 cups fresh strawberries, hulled and halved
  • 1 cup granulated sugar
  • 1/2 cup water
  • 1215 fresh basil leaves
  • 1 tablespoon fresh lemon juice
  • 34 tablespoons strawberry basil syrup
  • 1/4 cup heavy cream or coconut cream
  • 1.5 cups sparkling water (chilled)
  • 2 tablespoons vanilla syrup or 1/4 teaspoon vanilla extract
  • Ice cubes
  • Fresh strawberries and basil sprigs for garnish
  • Whipped cream (optional)

Instructions

  1. Make syrup: Combine strawberries, sugar, and water in a medium saucepan. Bring to a boil over medium-high heat, stirring occasionally. Once boiling, reduce heat and let simmer for 8-10 minutes until thickened.
  2. Infuse basil flavor: Add fresh basil leaves and remove from heat. Let steep for 5-7 minutes.
  3. Strain the mixture through a fine mesh strainer, pressing on the strawberries to extract all liquid.
  4. Add lemon juice to the strained syrup and allow to cool completely.
  5. Make the soda: Fill a tall glass with ice cubes and add 3-4 tablespoons of the cooled syrup.
  6. Layer with cream: Pour 1/4 cup of heavy cream over the syrup.
  7. Add sparkling water: Gently pour 1.5 cups of chilled sparkling water into the glass.
  8. Sweeten: Add vanilla syrup and stir gently.
  9. Garnish: Top with whipped cream and garnish with fresh strawberries and basil.
  10. Serve immediately and enjoy!

Notes

For a healthier option, substitute sugar with natural sweeteners like stevia or erythritol.
