  • 1 cup All-Purpose Flour
  • 3/4 cup Sugar (or natural sweeteners like honey or stevia)
  • 1 tsp Baking Powder
  • 2 Eggs
  • 1/2 cup Unsalted Butter (or coconut oil/applesauce)
  • 1/2 cup Milk (whole or almond/skimmilk)
  • 1 cup Whipped Cream (low-fat or homemade)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Prepare the baking sheet by greasing with butter or non-stick spray.
  3. Mix dry ingredients: whisk together the flour, sugar, and baking powder in a large bowl.
  4. Combine wet ingredients: mix the eggs, melted butter, and milk in another bowl until smooth.
  5. Gradually add the wet ingredients to the dry ingredients, stirring gently to avoid overmixing.
  6. Fold in the fresh berries carefully.
  7. Pour the batter into the prepared baking sheet, spreading evenly.
  8. Bake for 25-30 minutes or until a toothpick comes out clean.
  9. Cool the cake for about 10 minutes in the baking sheet, then transfer to a cooling rack.
  10. Prepare the frosting while the cake cools, using low-fat variety or homemade.
  11. Frost the cooled cake evenly with whipped cream frosting.
  12. Decorate the top with additional fresh berries.

Notes

For gluten-free, substitute all-purpose flour with a gluten-free blend. For lower calories, use erythritol instead of sugar.
