Delicious Ube Biko Flan

A delightful and colorful dessert combining the richness of flan with the nutty sweetness of ube, offering a healthy take on a traditional treat.

Ingredients

Scale
  • 1 cup Granulated Sugar
  • 2 tablespoons Water
  • 2 cups Glutinous Rice
  • 1 cup Coconut Milk
  • 1 cup Ube Halaya
  • 3 tablespoons Brown Sugar
  • 1 teaspoon Ube Extract
  • 1 teaspoon Salt
  • 6 large Egg Yolks
  • 1 can Sweetened Condensed Milk
  • 1 can Evaporated Milk
  • 1 teaspoon Vanilla Extract
  • 1 tablespoon Lemon Juice (optional)

Instructions

  1. Prepare the caramel: In a medium saucepan, combine 1 cup of granulated sugar and 2 tablespoons of water over medium heat. Allow the mixture to cook without stirring until it turns a beautiful golden amber color, about 8–10 minutes. Pour the caramel into a greased 9 x 13-inch baking dish and let it harden.
  2. Cook the rice: Rinse 2 cups of glutinous rice under cool water until it runs mostly clear. Cook with 2 cups of water over medium heat until absorbed and partially tender, about 12–15 minutes. Remove from heat and cool slightly.
  3. Make the ube mixture: In a saucepan, mix 1 cup of coconut milk, 1 cup of ube halaya, 3 tablespoons of brown sugar, 1 teaspoon of ube extract, and 1 teaspoon of salt. Cook until smooth. Stir in the cooked rice and continue cooking for 8–12 minutes.
  4. Layer the ube biko: Spread the ube mixture over the hardened caramel layer in the baking dish, pressing down slightly to create an even layer.
  5. Whisk the flan mixture: In a large bowl, whisk together 6 egg yolks, 1 can of sweetened condensed milk, 1 can of evaporated milk, 1 teaspoon of vanilla extract, and 1 tablespoon of lemon juice (if using). Strain through a fine sieve to remove lumps.
  6. Combine layers: Pour the flan mixture over the ube biko, covering it evenly. Cover loosely with aluminum foil.
  7. Bake: Preheat your oven to 325°F (160°C). Place the baking dish inside a larger roasting pan and pour hot water into the outer pan until it reaches halfway up the sides. Bake for 60–80 minutes, until set around the edges with a slight jiggle in the center.
  8. Cool down: Allow the dish to cool at room temperature for 1 hour, then refrigerate for at least 6 hours or overnight.
  9. Slice and serve: Run a thin knife around the edges to loosen, cut into squares, and serve.
