Ultimate Green Bean Casserole with Potatoes

A nutritious and comforting casserole combining fresh green beans and creamy potatoes, perfect for family dinners or meal prep.

  • 1 lb fresh green beans, trimmed
  • 2 cups potatoes, peeled and diced
  • 1 can cream of mushroom soup
  • 1 cup milk
  • 1 cup shredded cheddar cheese
  • 1 cup fried onions
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Boil the diced potatoes in a large pot of water for about 10 minutes until tender.
  3. Add the trimmed green beans to the pot and cook for an additional 5 minutes.
  4. Drain the cooked potatoes and green beans, then set aside.
  5. Mix the cream of mushroom soup and milk in a mixing bowl until smooth.
  6. Combine the cooked potatoes and green beans with the soup mixture, seasoning with salt and pepper.
  7. Transfer the mixture into a greased baking dish.
  8. Add the shredded cheddar cheese and fried onions on top.
  9. Bake for 25 to 30 minutes until golden and crispy.
  10. Serve hot and enjoy!

Notes

Use low-fat cream of mushroom soup and cheese for a lighter option. Excellent for meal prep.
