Unstuffed Cabbage Roll Soup

A healthy and delicious twist on traditional cabbage rolls, this Unstuffed Cabbage Roll Soup is low-carb, gluten-free, and perfect for meal prep.

  • 1 pound extra lean ground beef
  • 1 medium yellow onion, chopped
  • 3 garlic cloves, minced
  • 5 cups chopped green cabbage
  • 4 cups low sodium beef broth
  • 3 cups tomato sauce
  • 1 cup shredded carrots
  • 1/2 cup uncooked white or brown long grain rice
  • 2 dried bay leaves
  • 3 tablespoons packed brown sugar
  • 1 teaspoon salt
  • 1/2 teaspoon dried oregano leaves
  • 1/2 teaspoon ground black pepper
  • 1 1/2 tablespoons lemon juice

Instructions

  1. Cook the beef and onion: In a large soup pot, add the ground beef and place it over medium-high heat. Use a wooden spoon to break the meat apart as it cooks. Add the chopped onion and cook for about 8 minutes until the beef is browned. Stir occasionally to prevent sticking.
  2. Add garlic: Once the beef is browned, stir in the minced garlic and cook for an additional minute.
  3. Combine vegetables and broth: Next, add chopped cabbage, low sodium beef broth, tomato sauce, shredded carrots, uncooked rice, bay leaves, brown sugar, salt, oregano, and black pepper to the pot.
  4. Bring to a boil: Increase the heat to bring the mixture to a boil.
  5. Simmer: After the soup reaches boiling, reduce the heat to a simmer and cover the pot. Cook until the rice is tender—about 25 minutes for white rice and 45 minutes for brown rice.
  6. Add lemon juice: Once the rice is cooked, remove the pot from the heat and stir in the lemon juice.
  7. Let it rest: Let the soup rest uncovered for 10 minutes. Make sure to remove the bay leaves before serving.

Notes

This soup is suitable for meal prep and can be stored in the fridge for up to 5 days or frozen for up to 3 months.
