Bomba pastry, also known as Bombolone, is a beloved Italian doughnut fried to golden perfection and filled with luscious fillings. Light, fluffy, and irresistibly delicious, this treat has a rich history and is enjoyed worldwide with variations ranging from custard to Nutella fillings.

  • 1 packet (2 ¼ tsp) active dry yeast
  • ¾ cup warm milk
  • ¼ cup sugar
  • 3 large eggs
  • 4 tbsp unsalted butter, melted
  • ½ tsp salt
  • Oil for frying
  • Pastry cream, Nutella, or jam for filling
  • Powdered sugar for dusting

Instructions

  1. Mix Yeast and Milk: In a small bowl, combine warm milk, yeast, and a teaspoon of sugar. Let sit for 10 minutes until frothy.
  2. Prepare Dough: In a large bowl, mix flour, sugar, and salt. Add yeast mixture, eggs, and melted butter. Knead until smooth and elastic.
  3. First Rise: Cover dough with a cloth and let it rise in a warm place for 1-2 hours until doubled in size.
  4. Shape Bomboloni: Roll out dough to about ½ inch thick and cut into circles. Place on a tray, cover, and let rise for another 30 minutes.
  5. Fry: Heat oil to 350°F (175°C). Fry dough circles in batches, 2-3 minutes per side, until golden brown. Drain on paper towels.
  6. Fill and Serve: Once slightly cooled, use a piping bag to fill with pastry cream, Nutella, or jam. Dust with powdered sugar and serve warm.

Notes

Bomboloni are best enjoyed fresh. To reduce fat content, you can bake them instead of frying. Experiment with different fillings like fruit preserves or ricotta cream for variety.
