Healthy and delicious Zucchini Monster Cookies are a perfect blend of sweet indulgence and nutritious ingredients, packed with zucchini, oats, and peanut butter.

  • 1 cup finely shredded zucchini
  • 1 cup creamy peanut butter
  • 1/2 cup vegetable oil
  • 1 cup packed brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3 cups old-fashioned rolled oats
  • 1 cup semisweet chocolate chips
  • 1 cup candy-coated chocolate pieces

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Prepare the baking sheets with parchment paper.
  3. Shred the zucchini using a grater.
  4. Blot the shredded zucchini with a paper towel to remove excess moisture.
  5. Mix the peanut butter, vegetable oil, brown sugar, and granulated sugar until smooth.
  6. Add the eggs and vanilla extract, mixing until well incorporated.
  7. Incorporate the shredded zucchini into the wet mixture.
  8. Mix the flour, baking soda, and salt in a separate bowl.
  9. Combine the dry ingredients with the wet mixture until just mixed.
  10. Fold in the oats, chocolate chips, and candy-coated pieces.
  11. Form rounded portions of dough and place them on prepared baking sheets.
  12. Bake for 10 to 12 minutes until edges are golden.
  13. Cool on the baking sheet for 5 minutes before transferring them to a wire rack.

Notes

These cookies can be frozen before baking for later use. Substitute half of the flour with almond flour for a lower carb option.
