Crock Pot French Onion Beef Tips

A hearty and satisfying dish that’s a lighter version of classic comfort food, packed with flavor and focused on health benefits.

Ingredients

Scale
  • 2 Tablespoons of vegetable oil
  • 1 pound of beef stew meat
  • 1 and 1/2 teaspoons of ground black pepper
  • 1 yellow onion, cut into thin slices
  • 1 packet of low sodium Au Jus gravy mix
  • 1 packet of Beefy Onion Soup Mix
  • 1 (10.5 ounce) can of French Onion Soup
  • 5 Tablespoons of sliced unsalted butter
  • 2 cups of shredded Mozzarella and Provolone cheese or shredded Gruyere cheese

Instructions

  1. Sear the beef: Heat your heavy-bottomed skillet over medium-high heat. Add the vegetable oil and swirl to coat the bottom of the skillet. Once hot, sear the beef stew meat for 1-2 minutes on each side until it’s browned. Remove from heat and set aside.
  2. Prepare the crock pot: Spray the bottom of your crock pot with non-stick cooking spray.
  3. Layer the ingredients: Layer the sliced onions on the bottom of the crock pot, followed by the seared beef.
  4. Add seasonings: Sprinkle the Au Jus gravy mix and Beefy Onion Soup Mix evenly over the beef.
  5. Pour the soup: Pour the can of French Onion Soup over the mixture in the crock pot.
  6. Add butter: Slice the unsalted butter and place it evenly on top of the mixture.
  7. Cook and serve: Cover the crock pot and set it on low for 4 to 6 hours. About 30 minutes before serving, stir the beef gently and sprinkle the cheese on top to let it melt.
