Ground Beef and Cabbage Soup

A wholesome, hearty soup packed with nutrition, featuring ground beef and cabbage, perfect for meal prep and low-calorie diets.

  • 2 Tbsp Avocado Oil
  • 1 medium Yellow Onion, chopped
  • 3 large Carrots, chopped
  • 4 cloves Garlic, minced
  • 1 lb Ground Beef
  • 4 large Ripe Tomatoes, chopped
  • 4 cups Chicken or Beef Broth
  • 1 Tbsp Italian Seasoning
  • 1/4 tsp Black Pepper, to taste
  • Sea Salt, to taste
  • 1 large head Green Cabbage, chopped (about 6 to 8 cups)

Instructions

  1. Heat the pot by adding avocado oil to a large thick-bottomed pot over medium-high heat.
  2. Sauté the vegetables: Add the chopped onion, carrots, and minced garlic, stirring occasionally for 3 to 5 minutes.
  3. Brown the beef: Scoot the vegetables aside and add ground beef, browning for 3 minutes before flipping and browning the other side for an additional 2 to 3 minutes.
  4. Combine ingredients: Break the beef into smaller pieces and add chopped tomatoes, broth, seasoning, and salt, stirring well.
  5. Cook the cabbage: Bring to a boil, then reduce heat to low, cover, and simmer for about 30 minutes, stirring occasionally.
  6. Adjust seasoning: Taste the soup and add more sea salt or black pepper as desired.
  7. Serve and enjoy! Ladle the soup into bowls and serve hot.

Notes

This soup is great for meal prep and can be stored in the fridge for up to 4 days or frozen for up to 3 months. Feel free to add other vegetables or use leaner protein options.
