No Bake Peaches and Cream Pie

A delightful dessert offering a sweet combination of fresh peaches and creamy filling without the need for baking. Perfect for summer gatherings.

  • 3 yellow peaches
  • 1/4 cup brown sugar
  • 2 cinnamon sticks
  • 1 Tablespoon water
  • 1 teaspoon corn starch
  • 2 packages graham crackers or 2 1/2 cups graham cracker crumbs
  • 1/2 cup butter, melted
  • 3.5 oz instant vanilla pudding mix
  • 1 cup milk
  • 8 ounces cream cheese, softened
  • 1 1/2 cups heavy whipping cream
  • 1/3 cup powdered sugar
  • 1 teaspoon vanilla
  • 1 fresh yellow peach, thinly sliced

Instructions

  1. Take a cutting board and thinly slice your fresh yellow peaches. In a small saucepan, add 3 of the sliced peaches, sprinkle over the brown sugar, and add the cinnamon sticks. Cook over low to medium heat for about 5 minutes.
  2. While the peaches are cooking, whisk together the water and cornstarch to create a paste, then add it to the peaches. Cook until the peaches are soft and the mixture has thickened. Set aside to cool.
  3. In a blender, add the graham crackers and blend. Pour the graham cracker crumbs into a pie pan and evenly pour the melted butter over the crumbs. Mix to create a crumb crust.
  4. Press the crust mixture into the bottom and sides of the pie pan. Set aside.
  5. In a bowl, add the pudding mix and milk, and mix with a hand mixer. Then add the softened cream cheese and mix until smooth.
  6. In a separate bowl, whip the heavy cream with powdered sugar and vanilla until stiff peaks form. Fold half of the whipped cream into the cream filling.
  7. Assemble the pie by pouring the peach filling evenly on top of the crust, then topping it with the cream filling and remaining whipped cream. Decorate with sliced peaches.
  8. Store in the fridge for 2-3 hours to set before serving.

Notes

For a healthier option, consider substitutions like Greek yogurt for heavy cream or a gluten-free nut-based crust.
