Pineapple Cranberry Cheese Log

A delicious and nutritious cheese log combining cream cheese and sharp cheddar with sweet and tangy pineapple and cranberries.

  • 8 oz cream cheese, softened
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup crushed pineapple, drained
  • 1/2 cup dried cranberries, chopped
  • 1/4 cup green onions, chopped
  • 1/2 cup chopped pecans
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a mixing bowl, combine the softened cream cheese and shredded sharp cheddar cheese. Mix them together until smooth and creamy.
  2. Add the crushed pineapple, chopped dried cranberries, green onions, garlic powder, onion powder, salt, and pepper. Stir well to ensure everything is evenly combined and bursting with flavor.
  3. Take a large piece of plastic wrap and lay it down on a clean surface. Spoon the cheese mixture into the center, then shape it into a log.
  4. Wrap the log tightly in the plastic wrap and pop it into the fridge for at least 120 minutes, or until it’s nice and firm.
  5. Once your cheese log has chilled, carefully unwrap it from the plastic. Roll the log in the chopped pecans, pressing gently so they stick nicely.
  6. Transfer the beautiful cheese log to a serving platter, garnish with fresh parsley for a pop of color, and serve it up with your favorite crackers or slices of baguette.

Notes

This cheese log remains fresh for up to a week in the fridge. Freeze before rolling in pecans for up to a month.
