Watermelon Paloma Mocktail

A refreshing and healthy mocktail that combines sweet watermelon with lime and sparkling water, perfect for summer gatherings.

Ingredients

  • 2 cups Fresh watermelon, cut into chunks
  • 1 ounce Lime juice
  • 1/2 ounce Simple syrup (or sugar substitute)
  • 23 ounces Sparkling water
  • Tajin, for rim
  • Ice

Instructions

  1. Cut fresh watermelon into chunks and remove seeds. Place about 2 cups of watermelon in a blender.
  2. Blend until smooth. If you prefer a smooth drink, strain the puree through a fine strainer or cheesecloth to remove pulp.
  3. In a shaker or bowl, mix 4 ounces of watermelon juice with 1 ounce fresh lime juice and 1/2 ounce simple syrup.
  4. Add a handful of ice to the shaker and shake well for 10–15 seconds.
  5. Run a lime wedge around the rim of the serving glass. Dip the rim into Tajin on a small plate to coat.
  6. Fill the glass with ice. Pour the mixed watermelon and lime over the ice.
  7. Top with 2–3 ounces of sparkling water to taste. Stir gently.
  8. Garnish with a small wedge of lime or a thin slice of watermelon.

Notes

This mocktail can be made low calorie and diabetic-friendly by using a sugar substitute. Store leftover mixture in the fridge for up to 48 hours.
